Rainy Day Bread Recipie
1 1/2 cup flour
tsp. baking powder
tsp. baking soda
tsp. salt
tsp. cinnamon
1/2 tsp. nutmeg
1 cup instant cook oats (quaker is what I used)
1/2 cup dark brown sugar
1/2 cup granulate sugar
2 eggs
1/2 cup peanut butter
1 cup butter
1 tsp. vanilla
2 eggs
1 banana (very ripe)
Preheat the over to 325. Mix flour, baking soda, salt, baking powder, cinnamon, nutmeg and oats and set aside. Mix both sugars and banana until the banana is mashed. Add peanut butter and softened butter. After all of that has been mixed together (should be light brown color) add eggs and vanilla until everything is completely mixed. Slowly add the dry ingredients while mixing continuously. Once the batter is ready feel free to add any extra things you have lying around the house to give your bread something extra. I personally added 1 cup of semisweet chocolate chips, 1/2 slivered almonds, and 1/2 cup of raisins. I also sprinkled some chocolate chips, cinnamon, and brown sugar on the top to give it a nice crust.
It should yield two loaves if you use 9x11 bread pans. I cooked the both for 55
This tasted so delicious while I was sitting on the porch watching the rain. Very cozy to the stomach :)
